Busy bee

As summer begins blazing, it is strange that I start the season with a head cold. I think my health is finally catching up with my life. Never having to take a sick day this year, I can't really complain. I simply get to rest as I start my first summer break since I myself was a student. It's certainly been a busy couple of weeks... Who said you can't grow large veggies without a yard? I made some yummy low-fat blueberry muffins! This recipe from Pinterest was awesome! It's actually two recipes I rolled into one: blackened chicken with avocados and a fresh mango dressing My smart students rolled the wrong house (a different Mrs. Smith, go figure!) Thus, my co-workers found out and thought it would be funny to roll my classroom on the last day of school. It was really funny. We had a fabulous start to Memorial Day in St. Simons (prior to the cold taking root) We had one great day at the beach before the tropical storm rains hit. We celebrated A

Itchy Fingers & Itchy Feet

This post is not about the random rash that has sprung up on my calf, wrist, and stomach.... okay, yes I need to make a dermatologist appointment, but it's finals week at work okay! I'll get to the peculiar red bumps after all the grading, pulling out my hair, and crying over Senior good-byes. No....this time of year starts up my itchy feet and fingers! I am dying to get on the dance floor, take some studio classes, and break out my Flash dance as I sweat to my oldies. Plus my hands just can't find enough recipes. I've made it through the crazy spring busyness and want to start cooking all kinds of stuff! Matthew has assured me that he is encouraging me to flex both my feet and kitchen muscles. Although he seemed more than happy to encourage the kitchen stretching a bit more because he would love to be my taste tester! He also won the local Long Driver qualifier in Greenville this weekend! Road trip #2 was a quick one, but totally worth it!  Watch out America Smith

Parents' Raise

We spent 13 hours in the car this past weekend! Matthew and I will spend many an hour playing our "Guess that Station" Pandora game this summer with all of our road trips planned (no we aren't boring old people by the way, we are actually like fun elementary school aged children!) Yet, the long hours this weekend were worth it to see Sarah Jane graduate from UNC! She's off to save the world with her nursing degree. And maybe have a little party (sorry, I'm on a poetry unit at work right now). When asked how excited my mom and Scotch were to have finally helped their 5 children get through college, Scotch joyously responded, "We got a raise today! It feels great!" I'm so proud of Sarah, and we are blessed to have been a part of her big day. She's worked so incredibly hard, and I hope she enjoys the "real world" everyone keeps talking about. Can I have free medical procedures now that we have a nurse in the family? ~CC

First Anniversary!

I can't believe a whole year has flown by. If I had to use one word to describe the past year, it would be... blissfully-blessed. Okay, it's not really one word, but I hyphenated it. Truly, I am just in awe of God's blessings poured out on our lives. Matthew and I were able to reminisce, relax, and reconnect at Tybee Beach last weekend to celebrate our anniversary. My mom's BFF gave us a temporary stay at her beach house as a wedding gift, and we knew it'd be a great plan to save it for exactly one year later! It's like it was yesterday!  This was the view from the back porch! The weather was perfect! I was feeling a bit artistic! (Matthew and I have opposite feet, mine are small and wide, his are big and narrow. It's the perfect match!) :)  We Smiths love a little competition, and we can't just sit and veg, so we played our favorite beach game - golf holes (we need a better name though). As you can guess, there are two holes about 1
